Props for Our Peeps

We couldn't make all this food that you love if it weren't for the local farmers that support our mission here at Bolete. They work incredibly hard to perpetuate the philosophy of Slow Food and are committed to providing restaurants, diners and their communities with the option to eat and live better. For this we are eternally grateful. Here are some of the farms in PA that we use at the restaurant, but who are also sought after from some of the greatest restaurants in New York and Philadelphia:

    Liberty Gardens, Coopersburg, PA — Jeffrey Frank and his family run this farm just a few miles down the road. They are dedicated to chemical free, all natural herbs, greens, and vegetables.There product is really amazing and we get as much as we can from them. They are at the Emmaus Farmer's Market May through October as well as a supplier to some of the finer restaurants in New York (Grammercy Tavern, Union Square Café, etc).

    Dr. Joe Jurgielewicz's Duck, Hanover, PA — Dr. Joe is a veterinarian who attended Cornell University before deciding to move the family duck farming business form Long Island to PA. For over 20 years he has meticulously bred his Pekin ducks to be the best. He now has over 20 farms in PA and adheres strictly to all natural raising techniques.

    River & Glen, Bucks County, PA — River & Glen was founded on the simple philosophy that products that are good for you are raised and harvested humanely, contain no artificial preservatives or additives and are all from sustainable sources can also be the finest tasting products available on the market today. They provide us with our scallops, halibut and carefully sourced caviar.

    Happy Farms, Kintnersville, PA — Tom Colbaugh and Jean Nick's wonderful pastured, day-ranged Black Star, Red Star, and assorted Heritage breed hens are currently producing the finest eggs anywhere. They are fed only locally grown grains (no hormones or medication), freshly ground to their requirements and blended with an all-natural mix of minerals, vitamins, and probiotics produced by the Fertrell Company — plus all the green grass and clover they can eat. 610-306-2796

    Scholl Orchards, Bethlehem, PA — Scholl Orchards is a family business, owned and operated by George and Faith Scholl, with the active involvement of sons Ben and Jake and daughters Martha and Emily. They have been selling their fruit directly to the public since 1948. In addition to growing fruit in their orchards, including 20 varieties of peaches and operating the farm market, the family also presses apples in the fall and winter months for cider, using a special blend of apples for that perfect, Scholl Orchards flavor.

We also wanted to say thank you to our local artist that makes the interior of Bolete more beautiful and our landscape architect that has transformed the outside of Bolete and made my patio dreams a reality:

    Adriano Farinella — from Easton, PA he is in residence at the Banana Factory, as well as being a teacher at the Baum School in Allentown. His work is sought after and if you ever see anything you like at the restaurant, remember, it is all for sale.

    Dear Garden Associates — located in Bucks County Bill and his team create the unimaginable. They did things that I did not think were possible with our little spot out back and are so wonderful to work with.
